The Big Move & a Fresh Direct Giveaway

Hello 2015! As you can see I am not exactly on top of things so far this year … but its never too late to turn that around … yes?!

The big change in our lives has been a move.  Yes folks, we caved.  We moved out of the city and into the burbs.  And I couldn’t be happier.

My favorite room in the new house is of course the kitchen.  It has been so lovely to have a kitchen big enough for me to cook, the kids to play, my mom to sit at the island and talk to me …

 I can even see Skye playing in the yard while doing all of the above!  Ah. Domestic life 🙂

The move was in no way seamless, we did a bit of work on the house and therefore were living in a construction zone for months.  Honestly it didn’t bother me much.  The worst part was having to be home all the time to monitor the progress.  The fastest road to a crazed Gia is to make her stay indoors!  

But during the process our meals and ability to use the kitchen were very scattered.  I wanted to shout out Fresh Direct for making life just a little easier.  Their Prepped To Cook and Heat & Eat meals pretty much saved me.  As well as the delivery (see above: stuck in house and cannot grocery shop) 

Here is a sample of one meal we made for Valentine’s Day!  {VC and I like to go out together, but we generally celebrate on the 13th with the kids.  Because Love Day isn’t just for couples 🙂 }

This is the Smart & Simple Yogurt Chicken & Roasted Vegetables Meal Kit which is really smart and simple 🙂

It comes prepped with the chicken marinaded, and a simple recipe to follow.  Start to finish it took 20 mins!  AND my favorite part is that its simple enough for the kids to help me!

Healthier Arroz Caldo with Quinoa

Arroz Caldo is one of those soul warming dishes.  Its thick and hearty, it has ginger in it which warms your palate and soothes the tummy and yet its so simple.

In most Filipino homes its made when someone is sick, and we have continued along that tradition.  In fact whenever the Gs are not feeling well they request to eat it for breakfast lunch and dinner.  Me being the #mamalete I am I (of course) healthified it.  Using Quinoa instead of rice, a little extra ginger and water instead of high sodium chicken stock.

I find that in the fall and winter when you I’m coming in from a cold run or a long day out and about there is nothing I want more.  Thankfully its a quick and easy dish to whip up … less than 30 minutes and voila … happy bellies and warm souls. 

    Healthier Arroz Caldo
    Serves 4
    A healthier version of the classic Filipino dish. Using Chicken, ginger and Quinoa

    1. 3/4 cup quinoa
    2. 5 cups of water (or chicken stock for more flavor)
    3. 2 cloves of garlic
    4. 1/3 cup of peeled ginger, roughly chopped (leave chunks large enough to see)
    5. 1/2 cup of white onion, chopped
    6. 1/2 pound chicken breast
    1. Sautee ginger in a separate pan
    2. Simultaneously, boil 3/4 cup of quinoa in 5 cups of water
    3. add chopped onion, and garlic
    4. let boil and cook for 30 minutes
    5. cut chicken breast into cubes
    6. add to mixture and allow to simmer for 15 minutes
    7. add salt and pepper for seasoning

Immunity Pizza

Quick Whole Wheat Immune Boosting Pizza

Cold & Flu season is upon us … and when The Gs were fighting off their colds, this mama got sneaky.  Enter Mama’s Immune Boosting Pizza.  With ingredients that heal their little bodies and taste incredible to the whole family!

Last week my poor little Gs were sick with croup – yucky coughs, sore throats, fevers and body aches.  Heartbreaking.  After about 5 days of no sleep, and lots of tears they finally slept through the night …. and woke up about 14 hours later asking for pizza.

*** Ahhh *** it felt like the clouds moved and the sun shine down on my kitchen.  Absolute music to my ears to hear them happy and hungry!

However being that this was their first real meal in days, I wasn’t about to order some Dominos … so I cooked up some happy, healthy Immunity pizza, and it was a huge hit.

The crust boasts these ingredients and their awesome benefits:

Immune Boosting Pizza.  made with garlic, , parsley & spinach

Garlic – boosts immune system & reduces the severity of colds

Parsley – rich in many vital vitamins, including Vitamin C,  B 12, K and A. Keeps your immune system strong, tones your bones and heals the nervous system.

Turmeric – powerful anti-inflammatory and antioxidant properties

Spinach – Rich in antioxidants, a good source of vitamins A, B2, C and K, and also contains magnesium, manganese, folate, iron, calcium and potassium.

Crust Ingredients:

  • 1 3/4 Cup Whole Wheat Flour
  • 1/4 cup ground flax meal
  • 1 tsp garlic powder or 2 cloves of crushed garlic
  • 1 tsp dry parsley or 2 tablespoons minced fresh parsley
  • 1/2 tsp tumeric powder
  • 2 tsp baking powder
  • 3/4 cup water
  • 2 tablespoons olive oil


  • Tomato Paste as desired
  • shredded mozzarella cheese – or for dairy free Daiya Shredded Mozzarella
  • spinach leaves
  • Anything else you love! I put some sliced turkey for protein and a few pieces of whole milk mozzarella!

  • Preheat oven to 400 degrees
  • Put all of the crust ingredients into a big bowl and mix it all together to make a dough. You can use your hands, or if you are like me and hate that feeling … use a flexible spatula.  Once mixed you want the dough to come together in a ball and feel spongy.
  • On a slightly oiled baking sheet or Silpat press the dough into whichever shape you desire.  This one I use my hands, and I find it works best if I dust them with a little flour before shaping the dough.  Try to get it as flat as possible without tearing it.
  • Bake for 5-7 minutes, depending on how thick your crust is. You want it to firm up a bit to be ready for your toppings
  • Take out and put your toppings on!
  • Bake another 10 mins or until the crust is browned and the toppings are cooked.
